Pancarré Pizza

The “pizza” with pancarré is a simple and quick recipe that lends itself to multiple variations. Here is a basic version:

Ingredients

  • Pancarré (as many slices as you want to serve)
  • Tomato sauce or tomato passata
  • Mozzarella (better if with reduced water content, like pizza mozzarella)
  • Oregano
  • Extra virgin olive oil
  • Salt
  • Additional ingredients to taste: anchovies, olives, salami, mushrooms, cooked ham, vegetables, etc.

Preparation

  1. Prepare the tomato sauce by heating the passata in a pan with a drizzle of oil, salt, and a pinch of sugar to correct the acidity, letting it simmer until it has slightly thickened.
  2. Preheat the oven to 200 °C.
  3. Arrange the pancarré slices on a baking tray lined with parchment paper.
  4. Spread the tomato sauce on each slice of pancarré, leaving a small border on the sides.
  5. Cut the mozzarella into slices or grate it and distribute it over the tomato sauce.
  6. Add a pinch of salt and oregano.
  7. If desired, add other ingredients to taste to customize your “pizza”.
  8. Bake the pancarré “pizzas” until the mozzarella has melted and the edges of the pancarré slices are golden, it will take about 10-15 minutes.
  9. Serve immediately, perhaps accompanied by a sprinkle of fresh basil or dried chili for those who like more vibrant flavors.
