Pancarré Pizza

Ingredients
- Pancarré (as many slices as you want to serve)
- Tomato sauce or tomato passata
- Mozzarella (better if with reduced water content, like pizza mozzarella)
- Oregano
- Extra virgin olive oil
- Salt
- Additional ingredients to taste: anchovies, olives, salami, mushrooms, cooked ham, vegetables, etc.
Preparation
- Prepare the tomato sauce by heating the passata in a pan with a drizzle of oil, salt, and a pinch of sugar to correct the acidity, letting it simmer until it has slightly thickened.
- Preheat the oven to 200 °C.
- Arrange the pancarré slices on a baking tray lined with parchment paper.
- Spread the tomato sauce on each slice of pancarré, leaving a small border on the sides.
- Cut the mozzarella into slices or grate it and distribute it over the tomato sauce.
- Add a pinch of salt and oregano.
- If desired, add other ingredients to taste to customize your “pizza”.
- Bake the pancarré “pizzas” until the mozzarella has melted and the edges of the pancarré slices are golden, it will take about 10-15 minutes.
- Serve immediately, perhaps accompanied by a sprinkle of fresh basil or dried chili for those who like more vibrant flavors.
