Pancetta-Wrapped Mini Frittatas

Ingredients

  • 4 eggs
  • 100 g sliced pancetta
  • 2 tablespoons milk
  • Salt and pepper to taste

Preparation

  1. In a bowl, beat the eggs with the milk, a pinch of salt and pepper. Add the chopped aromatic herbs.
  2. Heat a drizzle of oil in a non-stick pan and pour in the egg mixture to create a thin frittata. Cook over medium-low heat until golden on one side, then flip it using a lid or plate and cook on the opposite side.
  3. Once cooked, remove the frittata from the heat and let it cool slightly. Then cut it into rectangles or squares of appropriate size to be wrapped in pancetta.
  4. Wrap each piece of frittata with a slice of pancetta. Secure the pancetta with a toothpick if necessary.
  5. Heat another pan (preferably non-stick) and cook the pancetta-wrapped mini frittatas until crispy and golden on all sides.
  6. Drain the mini frittatas on paper towels to remove excess oil before serving.
