Ingredients
- 4 eggs
- 100 g sliced pancetta
- 2 tablespoons milk
- Salt and pepper to taste
- Aromatic herbs to taste (e.g., parsley, basil, etc.)
- Extra virgin olive oil
Preparation
- In a bowl, beat the eggs with the milk, a pinch of salt and pepper. Add the chopped aromatic herbs.
- Heat a drizzle of oil in a non-stick pan and pour in the egg mixture to create a thin frittata. Cook over medium-low heat until golden on one side, then flip it using a lid or plate and cook on the opposite side.
- Once cooked, remove the frittata from the heat and let it cool slightly. Then cut it into rectangles or squares of appropriate size to be wrapped in pancetta.
- Wrap each piece of frittata with a slice of pancetta. Secure the pancetta with a toothpick if necessary.
- Heat another pan (preferably non-stick) and cook the pancetta-wrapped mini frittatas until crispy and golden on all sides.
- Drain the mini frittatas on paper towels to remove excess oil before serving.
