Pasta with Asparagus and Sausage

Ingredients
- 320 g of pasta (penne, rigatoni or your favorite)
- 300 g of fresh asparagus
- 200 g of pork sausage
- 1 clove of garlic
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Grated Parmesan (optional)
- Dry white wine (optional for deglazing)
Preparation
- Clean the asparagus by removing the woody part of the stem and cutting them into pieces about 2 cm long, leaving the tips whole.
- In a large skillet, sauté a clove of garlic in extra virgin olive oil, then remove the garlic once golden.
- Add the crumbled sausage and brown until well golden, removing excess fat if necessary.
- (Optional) Deglaze with a splash of white wine and let it evaporate.
- Add the asparagus to the pan with the sausage and cook for about 10-15 minutes, adding a little water if necessary to prevent sticking.
- Meanwhile, bring a large pot of salted water to a boil and cook the pasta al dente according to the package instructions.
- Drain the pasta and transfer to the pan with sausage and asparagus, mixing well over the heat for a few minutes.
- Adjust salt and pepper and, if you like, sprinkle with grated Parmesan before serving.
