Pasta with Asparagus and Sausage

Pasta with asparagus and sausage is a delicious spring dish that combines the sweetness of asparagus with the intense flavor of sausage. Here’s how to prepare it:

Ingredients

  • 320 g of pasta (penne, rigatoni or your favorite)
  • 300 g of fresh asparagus
  • 200 g of pork sausage
  • 1 clove of garlic
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Grated Parmesan (optional)
  • Dry white wine (optional for deglazing)

Preparation

  1. Clean the asparagus by removing the woody part of the stem and cutting them into pieces about 2 cm long, leaving the tips whole.
  2. In a large skillet, sauté a clove of garlic in extra virgin olive oil, then remove the garlic once golden.
  3. Add the crumbled sausage and brown until well golden, removing excess fat if necessary.
  4. (Optional) Deglaze with a splash of white wine and let it evaporate.
  5. Add the asparagus to the pan with the sausage and cook for about 10-15 minutes, adding a little water if necessary to prevent sticking.
  6. Meanwhile, bring a large pot of salted water to a boil and cook the pasta al dente according to the package instructions.
  7. Drain the pasta and transfer to the pan with sausage and asparagus, mixing well over the heat for a few minutes.
  8. Adjust salt and pepper and, if you like, sprinkle with grated Parmesan before serving.
