Ingredients
- 320 grams of pasta (spaghetti or penne are a good choice)
- 150 grams of pancetta cut into cubes
- 200 ml of cooking cream
- 1 clove of garlic
- Extra virgin olive oil to taste
- Salt to taste
- Black pepper to taste
- Grated Parmesan (amount as desired)
Preparation
- Bring a pot of salted water to a boil for the pasta.
- While the water is heating, take a large pan and heat a drizzle of oil with a clove of garlic to flavor it. Remove the garlic as soon as it becomes golden.
- Add the pancetta cubes to the pan and let it brown until crispy over medium-high heat.
- Meanwhile, cook the pasta al dente according to the instructions on the package.
- Once the pancetta is crispy, lower the heat and add the cooking cream. Let the cream heat up and mix well with the flavor of the pancetta, adjusting with salt and pepper.
- Drain the pasta al dente and reserve some cooking water.
- Pour the pasta into the pan with the pancetta and cream, adding a bit of cooking water to make everything creamier if necessary.
- Mix the pasta well to combine the ingredients and let it flavor for a minute.
- Serve the pasta hot, sprinkling with grated Parmesan to taste.
