Pasta with Perch

Perch pasta is a delicate and flavorful dish that combines the refined taste of perch with the simplicity of pasta. Here is a recipe you could follow:

Ingredients

  • 320 g of pasta (penne or spaghetti work great)
  • 400 g of perch fillets
  • 1 glass of white wine
  • 1 clove of garlic
  • Chopped parsley to taste
  • Extra virgin olive oil
  • Salt and pepper to taste

Preparation

  1. Clean the perch fillets well, removing any bones and skin. Cut them into pieces and set aside.
  2. In a large pan, heat a drizzle of oil with a clove of garlic. Once golden, remove it and add the perch.
  3. Cook the fish over medium heat for a few minutes, then deglaze with a glass of white wine. Let the alcohol evaporate, then lower the heat and cook for another 5-10 minutes. Season with salt and pepper.
  4. Meanwhile, cook the pasta in plenty of salted water following the cooking times indicated on the package to achieve al dente pasta.
  5. Drain the pasta and transfer it to the pan with the perch, mixing well to flavor everything.
  6. Sprinkle with fresh chopped parsley and serve immediately.
