Pasta with Speck and Saffron

Ingredients

  • 350 g of pasta (penne, fusilli or other short pasta of your choice)
  • 100 g of speck, cut into strips or cubes
  • 1 sachet of saffron powder or a few pistils
  • 1 small onion or shallot, finely chopped
  • 200 ml of cooking cream
  • Grated Parmesan cheese to taste
  • Extra virgin olive oil
  • Salt and pepper to taste
  • (Optional) A pinch of nutmeg

Preparation

  1. Bring a pot of salted water to a boil and cook the pasta according to the instructions on the package until it is al dente.

  2. Meanwhile, in a large skillet, heat a drizzle of extra virgin olive oil and gently sauté the finely chopped onion or shallot until it becomes translucent.

  3. Add the speck to the skillet and let it cook until it becomes crispy on the edges.

  4. Dissolve the saffron in a couple of tablespoons of hot water and pour it into the skillet with the speck. Mix well to allow the flavor and color to be absorbed by the speck.

  5. Pour the cream into the skillet and mix. If desired, add a pinch of salt, pepper, and nutmeg. Cook over low heat for a few minutes.

  6. When the pasta is al dente, drain it and transfer it to the skillet with the speck and saffron sauce. Mix well so that all the ingredients combine.

  7. Serve hot, with a generous sprinkle of grated Parmesan.
