Pasta with Stracchino and Sausage

This dish combines the creaminess of stracchino with the intense flavor of sausage, creating a very tasty pairing. Here is the recipe to prepare pasta with stracchino and sausage for about 4 people.

Ingredients

  • 320 g of pasta (penne, rigatoni or another shape of your choice)
  • 200 g of stracchino (if you want you can also use another type of creamy cheese)
  • 300 g of sausage (preferably pork type)
  • 1 small onion
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste (optional)
  • White wine (a splash for deglazing, optional)
  • grated Parmesan (optional, for garnish)
  • Pasta cooking water to taste

Preparation

  1. Start by bringing a pot of salted water to a boil to cook the pasta. When the water boils, add the pasta and cook it according to the time indicated on the package, al dente.

  2. Meanwhile, in a large skillet, sauté the finely chopped onion with a drizzle of extra virgin olive oil until it becomes translucent.

  3. Remove the casing from the sausage and crumble it. Add it to the skillet with the onion and let it brown until well cooked. If desired, you can deglaze with a splash of white wine until the alcohol evaporates.

  4. Lower the heat and add the stracchino in pieces, stirring well to melt it with the help of a bit of pasta cooking water if necessary to obtain a smooth cream.

  5. Drain the pasta al dente, reserving some cooking water, and transfer it to the skillet with the sausage and stracchino sauce.

  6. Stir well to combine the pasta with the sauce, adding a bit of cooking water if you see that the sauce is too thick.

  7. Plate the pasta and, if desired, add a sprinkle of freshly ground black pepper and grated Parmesan.
