17/11/2023This dish combines the creaminess of stracchino with the intense flavor of sausage, creating a very tasty pairing. Here is the recipe to prepare pasta with stracchino and sausage for about 4 people.
Ingredients
- 320 g of pasta (penne, rigatoni or another shape of your choice)
- 200 g of stracchino (if you want you can also use another type of creamy cheese)
- 300 g of sausage (preferably pork type)
- 1 small onion
- Extra virgin olive oil to taste
- Salt to taste
- Black pepper to taste (optional)
- White wine (a splash for deglazing, optional)
- grated Parmesan (optional, for garnish)
- Pasta cooking water to taste
Preparation
-
Start by bringing a pot of salted water to a boil to cook the pasta. When the water boils, add the pasta and cook it according to the time indicated on the package, al dente.
-
Meanwhile, in a large skillet, sauté the finely chopped onion with a drizzle of extra virgin olive oil until it becomes translucent.
-
Remove the casing from the sausage and crumble it. Add it to the skillet with the onion and let it brown until well cooked. If desired, you can deglaze with a splash of white wine until the alcohol evaporates.
-
Lower the heat and add the stracchino in pieces, stirring well to melt it with the help of a bit of pasta cooking water if necessary to obtain a smooth cream.
-
Drain the pasta al dente, reserving some cooking water, and transfer it to the skillet with the sausage and stracchino sauce.
-
Stir well to combine the pasta with the sauce, adding a bit of cooking water if you see that the sauce is too thick.
-
Plate the pasta and, if desired, add a sprinkle of freshly ground black pepper and grated Parmesan.
Fun Fact
In many Italian regions, sausage and cheese are ingredients often used together in first courses, as they offer a balance between strong flavors and creamy textures that are very popular. In this recipe, stracchino adds a sweetness and creaminess that balances the slightly spicy and intense taste of the sausage.
