Pasta with Stracciatella

Ingredients
- 320 g of pasta of your choice (linguine, spaghetti or fusilli work well)
- 200 g of buffalo stracciatella
- 250 g of cherry tomatoes
- 2 tablespoons of extra virgin olive oil
- 1 clove of garlic
- Salt and pepper to taste
- Fresh basil leaves for garnish
- (Optional) Shavings of Parmesan or pecorino, to season
- (Optional) Fresh chili or flakes, to add a bit of spice
Preparation
- Bring a pot of salted water to a boil to cook the pasta.
- Meanwhile, in a sufficiently large skillet, heat the extra virgin olive oil with the peeled garlic clove. If you like the dish slightly spicy, you can also add chili at this point.
- When the garlic turns golden, add the cherry tomatoes cut in half and let them cook over medium-low heat until they start to soften and form a light sauce. Season with salt and pepper.
- Cook the chosen pasta according to the package instructions to achieve an al dente texture.
- Drain the pasta and add it to the skillet with the tomatoes, mixing well to coat it in the sauce. If necessary, you can add a bit of cooking water to make the sauce creamier.
- Turn off the heat and add the buffalo stracciatella in pieces, stirring gently so it melts slightly with the heat of the pasta.
- Serve immediately, garnished with fresh basil leaves and, if desired, a sprinkle of grated cheese.
