Pasta with Stracciatella

Ingredients

  • 320 g of pasta of your choice (linguine, spaghetti or fusilli work well)
  • 200 g of buffalo stracciatella
  • 250 g of cherry tomatoes
  • 2 tablespoons of extra virgin olive oil
  • 1 clove of garlic
  • Salt and pepper to taste
  • Fresh basil leaves for garnish
  • (Optional) Shavings of Parmesan or pecorino, to season
  • (Optional) Fresh chili or flakes, to add a bit of spice

Preparation

  1. Bring a pot of salted water to a boil to cook the pasta.
  2. Meanwhile, in a sufficiently large skillet, heat the extra virgin olive oil with the peeled garlic clove. If you like the dish slightly spicy, you can also add chili at this point.
  3. When the garlic turns golden, add the cherry tomatoes cut in half and let them cook over medium-low heat until they start to soften and form a light sauce. Season with salt and pepper.
  4. Cook the chosen pasta according to the package instructions to achieve an al dente texture.
  5. Drain the pasta and add it to the skillet with the tomatoes, mixing well to coat it in the sauce. If necessary, you can add a bit of cooking water to make the sauce creamier.
  6. Turn off the heat and add the buffalo stracciatella in pieces, stirring gently so it melts slightly with the heat of the pasta.
  7. Serve immediately, garnished with fresh basil leaves and, if desired, a sprinkle of grated cheese.
