Pasta with Surimi and Curry

Ingredients

  • 320 grams of pasta (penne or spaghetti are fine)
  • 200 grams of surimi (crab sticks)
  • 1 medium onion
  • 2 garlic cloves
  • 200 ml of cooking cream
  • 2 teaspoons of curry powder
  • Extra virgin olive oil
  • Salt to taste
  • Pepper to taste
  • Fresh parsley (optional)

Preparation

  1. Start by bringing a pot of salted water to a boil to cook the pasta. When the water boils, cook the pasta al dente following the times indicated on the package.

  2. Meanwhile, thinly slice the onion and garlic. In a large pan, heat some olive oil and sauté the onion and garlic until they become translucent.

  3. Cut the surimi sticks into slices that are not too thin and add them to the pan with the sautéed onion and garlic.

  4. Sprinkle the curry over the surimi and sautéed mixture and mix well to flavor everything.

  5. Pour the cooking cream into the pan, bring to a light boil, then lower the heat and let the sauce thicken for a few minutes. Adjust salt and pepper to taste.

  6. Drain the al dente pasta and pour it into the pan with the surimi and curry sauce. Mix well to combine the ingredients.

  7. If desired, sprinkle with chopped fresh parsley before serving, to add a touch of color and freshness to the dish.
