Pasta with Tuna

Ingredients

  • Pasta (spaghetti, penne or other type of your choice): 400 g
  • Canned tuna (preferably in olive oil): 2 cans (about 160-200 g total)
  • Garlic: 2 cloves
  • Extra virgin olive oil: 4 tablespoons
  • Peeled tomatoes: 400 g (or tomato passata)
  • Capers (optional): 1 tablespoon
  • Black olives (optional): a handful, pitted and chopped
  • Red chili pepper (optional): to taste
  • Fresh chopped parsley: for garnish
  • Salt and pepper: to taste.

Preparation

  1. Prepare the Sauce: In a pan, heat the extra virgin olive oil and add the chopped garlic cloves (and the chili pepper, if using). Sauté over medium heat until the garlic turns golden.

  2. Add the Tuna: Drain the tuna from the oil and add it to the pan. Break it up with a wooden spoon and let it cook for a couple of minutes.

  3. Add Tomatoes and Aromatics: Add the peeled tomatoes (or passata) to the pan. Add the capers and olives, if using. Let it cook over medium heat for about 10-15 minutes. Adjust salt and pepper.
