Pasta with Tuna

Ingredients
- Pasta (spaghetti, penne or other type of your choice): 400 g
- Canned tuna (preferably in olive oil): 2 cans (about 160-200 g total)
- Garlic: 2 cloves
- Extra virgin olive oil: 4 tablespoons
- Peeled tomatoes: 400 g (or tomato passata)
- Capers (optional): 1 tablespoon
- Black olives (optional): a handful, pitted and chopped
- Red chili pepper (optional): to taste
- Fresh chopped parsley: for garnish
- Salt and pepper: to taste.

Prepare the Sauce: In a pan, heat the extra virgin olive oil and add the chopped garlic cloves (and the chili pepper, if using). Sauté over medium heat until the garlic turns golden.

Add the Tuna: Drain the tuna from the oil and add it to the pan. Break it up with a wooden spoon and let it cook for a couple of minutes.

Add Tomatoes and Aromatics: Add the peeled tomatoes (or passata) to the pan. Add the capers and olives, if using. Let it cook over medium heat for about 10-15 minutes. Adjust salt and pepper.

Cooking the Pasta: Meanwhile, cook the pasta in a pot of boiling salted water until al dente.

Combine Pasta and Sauce: Drain the pasta and add it to the tuna sauce. Mix well to coat the pasta.
