Pea Fritters

Pea fritters are a simple and tasty dish, perfect as an appetizer or as a snack.

Ingredients

  • 200 g fresh or frozen peas
  • 1 egg
  • 100 g flour
  • 50 ml milk
  • 1 tablespoon grated parmesan
  • Salt and pepper to taste
  • Oil for frying
  • (Optional) 1 tablespoon chopped fresh mint

Preparation

  1. If using fresh peas, blanch them for a few minutes in boiling salted water, then drain and let them cool. If using frozen peas, you can quickly thaw them under lukewarm water.

  2. In a blender, blend the peas (setting aside one tablespoon to give texture to the fritters) until you obtain a puree.

  3. In a bowl, beat the egg and add the milk, mixing well.

  4. Incorporate the pea puree and the tablespoon of whole peas set aside into the egg and milk mixture.

  5. Add the flour, grated parmesan, mint (if used), salt and pepper, mixing until you obtain a homogeneous batter.

  6. Heat plenty of oil in a pan and, when it’s hot, drop spoonfuls of the batter to form the fritters.

  7. Fry the fritters until they are golden on both sides, then drain them on paper towels to remove excess oil.

  8. Serve the fritters hot, accompanied if desired with a fresh salad or a yogurt sauce.

Trivia

Pea fritters are a dish that you can easily adapt according to tastes and needs. For example, for a lighter version, you can bake them in the oven on a baking tray lined with parchment paper until golden, turning them once halfway through cooking.
