Peach and Amaretti Strudel

Peach and amaretti strudel is a delicious variant of the classic strudel, combining the sweetness and juiciness of peaches with the crispiness and aroma of amaretti. Here is the recipe with an Italian touch in the choice of ingredients and flavor:

Ingredients

  • 1 roll of puff pastry or strudel dough
  • 4 ripe peaches
  • 100 g of amaretti
  • 30 g of brown sugar
  • 20 g of melted butter
  • 1 teaspoon of ground cinnamon
  • 1 lemon (the juice)
  • Powdered sugar for dusting

Preparation

  1. Preheat the oven to 180 °C.
  2. Wash the peaches, cut them in half, remove the pit and cut them into slices that are not too thin, then place them in a bowl.
  3. Squeeze the lemon and drizzle the juice over the peaches to prevent oxidation.
  4. Crumble the amaretti coarsely and add them to the peaches along with the brown sugar and cinnamon. Mix gently to avoid breaking the peach slices.
  5. Roll out the puff pastry or strudel dough on a lightly floured surface and distribute the peach and amaretti mixture, leaving a margin along the edges.
  6. Roll the dough onto itself starting from the long side, sealing the ends well.
  7. Transfer the strudel to a baking tray lined with parchment paper, brush the surface with melted butter and bake for about 30 minutes or until golden and crispy.
  8. Let the strudel cool before dusting with powdered sugar.
  9. Serve warm or at room temperature.

Fun Facts

Strudel is a dessert that originated in the Austro-Hungarian Empire but has also become very popular in Italy, especially in the Trentino-Alto Adige region. The classic version involves the use of apples, raisins and pine nuts, but in this variant we have embraced Italian flavors with peaches and amaretti, ingredients much loved in our cuisine.
