Peach Cake

Ingredients
- 3 eggs
- 200 g sugar
- 200 g softened butter
- 200 g 00 flour
- 1 packet baking powder
- 1 pinch of salt
- Grated zest of 1 lemon
- 4 ripe peaches (if not in season, you can use canned peaches)
- Powdered sugar for decoration (optional)
Preparation
- Preheat the oven to 180 °C and butter and flour a 24 cm diameter cake pan.
- Wash the peaches, cut them in half, remove the pit, and then slice them.
- In a large bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.
- Add the softened butter and continue beating until it is well incorporated.
- Incorporate the sifted flour, baking powder, pinch of salt, and grated lemon zest, mixing gently until you obtain a homogeneous batter.
- Pour the batter into the prepared pan, then arrange the peach slices in a circular pattern on the surface, starting from the edge and working towards the center.
- Bake for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.
- Let the cake cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Before serving, you can dust the surface with powdered sugar for a decorative touch and extra sweetness.
