Penne with Amatriciana and Shrimp

Ingredients
- 350 g rigatoni penne
- 200 g guanciale
- 250 g peeled shrimp
- 400 g peeled tomatoes
- 1 fresh red chili pepper (optional)
- 80 g grated Pecorino Romano
- 1 onion
- Salt to taste
- Extra-virgin olive oil
- White wine (a splash)

Start by cutting the guanciale into strips or cubes and place it in a large skillet with a drizzle of extra-virgin olive oil. Sauté over medium heat until crispy. If you want to add some heat, add the chopped chili pepper at this point.

Meanwhile, peel the shrimp if you have not already done so. You can also devein them by making a small incision along the back and removing the vein.

Once the guanciale is browned, remove it from the skillet and set it aside. In the same skillet, sauté the finely chopped onion until it becomes translucent. Add another drizzle of oil if needed.
