Penne with Bell Peppers, Cream, and Curry

Ingredients
- 350 g penne
- 2 bell peppers (red and yellow for color)
- 200 ml cooking cream
- 1 teaspoon curry powder
- 1 garlic clove
- Extra virgin olive oil to taste
- Salt and pepper to taste
- Grated Parmesan (optional)
- (Optional) chopped parsley for garnish

Start by cleaning the bell peppers, removing the internal seeds and white membranes, then cut them into strips or cubes.

In a fairly wide pan, heat a drizzle of extra virgin olive oil and add one garlic clove. Let the garlic turn golden for a few minutes, then remove it.

Add the cut bell peppers to the pan and let them cook over medium heat for about 10-15 minutes, or until softened. If necessary, add a little water to prevent them from sticking to the bottom.

Once the bell peppers are cooked, add the cooking cream and curry powder. Mix well and let the cream heat without reaching a boil. Adjust with salt and pepper.

Meanwhile, bring a pot of salted water to a boil and cook the penne according to the package instructions for al dente.

Drain the pasta and transfer it to the pan with the bell pepper, cream, and curry sauce. Toss everything together for a minute or two so the pasta absorbs the sauce.

Serve immediately, garnished with grated Parmesan to taste or, if you prefer a fresh touch, some chopped parsley.
This recipe is very versatile and can be adapted for different dietary needs. For example, if you cannot consume dairy, you could replace the cooking cream with a plant-based version made from soy or oats. Or, if you are vegetarian, make sure to omit any meat products from related recipes, such as the possible addition of pancetta or sausage.
