- Roll out the puff pastry and cut into strips or squares, depending on the shape you want to give your puff pastries.
- Place a bit of pepper and a small amount of gorgonzola cut into cubes or crumbled in the center of each piece of puff pastry.
- Fold the puff pastry over itself to enclose the filling, creating small pockets or triangles.
- Seal the edges well, perhaps using the tines of a fork to also create a decorative effect.
- Arrange the puff pastries on a baking sheet lined with parchment paper, brush the surface with the beaten egg yolk to give them a nice golden color.
- Bake for about 15-20 minutes or until the puff pastries are golden and puffed.
- Remove from the oven and let rest for a couple of minutes before serving.
The pepper and gorgonzola puff pastries are delicious both hot and at room temperature.
Trivia
Gorgonzola is an Italian DOP cheese that can be of two types: sweet or spicy. For this recipe we used sweet gorgonzola, which has a more delicate and creamy flavor, perfect for balancing the taste of the peppers.
