Ingredients
- 250 ml pineapple juice, preferably fresh
- 200 ml coconut milk (not coconut cream, which is thicker and sweeter)
- 50 ml agave syrup or honey to sweeten (optional, depending on the sweetness of the pineapple and personal preferences)
- 1 teaspoon vanilla extract (optional)
- Grated coconut (optional, to add texture)

In a blender, combine the pineapple juice, coconut milk, agave syrup or honey if you decide to use it, and the vanilla extract if you choose to include it. Blend until you obtain a homogeneous mixture.

If you wish to add grated coconut for more texture and flavor, incorporate it now and mix with a spoon.

Pour the mixture into the popsicle molds, leaving a little space at the top to allow the liquid to expand during freezing.

Insert the popsicle sticks into the molds. If you don’t have specific molds, you can also use plastic or paper cups with wooden sticks or ice cream spoons.

Place the molds in the freezer and leave them until they are completely solidified, usually this takes about 4-6 hours, but it’s better to leave them overnight.
