Ingredients
- 400 g fresh shelled shrimp
- 100 g unsalted pistachios
- 2 garlic cloves
- Fresh parsley to taste
- Extra virgin olive oil
- Salt and pepper to taste
- Grated lemon zest
- 50 ml brandy or other liqueur for deglazing (optional)

Start by toasting the pistachios in a non-stick pan without adding any fat. As soon as they begin to release their aroma, remove them from the heat and coarsely chop them with a knife, not too finely to maintain some texture.

Peel the garlic cloves and slice them thinly. In a pan, heat a drizzle of extra virgin olive oil and sauté the garlic until golden, without burning it.

If using the brandy, this is the time to deglaze the shrimp: pour in the liqueur and let the alcohol evaporate over high heat.
