Pizzaiola Frittata

The pizzaiola frittata is a tasty variant of the classic frittata, enriched with typical pizza ingredients. Here’s how to prepare this dish.

Ingredients

  • 6 eggs
  • 100 g mozzarella (preferably fior di latte)
  • 150 g tomato passata
  • 1 garlic clove
  • Oregano to taste
  • Fresh basil to taste
  • 50 g grated Parmesan
  • Salt and pepper to taste
  • Extra-virgin olive oil to taste

Preparation

  1. Start by heating a drizzle of extra-virgin olive oil in a non-stick pan and add the garlic clove. Sauté until golden, then remove it and pour the tomato passata into the pan.

  2. Let the tomato passata cook for about 10 minutes over medium heat. Season with salt and pepper, and add a pinch of oregano and a few hand-torn basil leaves.

  3. While the sauce cooks, crack the eggs into a bowl, add salt and pepper, and whisk with a fork or whisk until you obtain a homogeneous mixture.

  4. Add the grated Parmesan to the beaten eggs and mix well.

  5. Once the sauce is ready, remove it from the pan and set aside. In the same pan, add another drizzle of oil and pour in the egg mixture.

  6. Cook the frittata over medium-low heat until the bottom has set, then spread the tomato sauce over the surface and add the mozzarella cut into cubes.

  7. Cover the pan with a lid and let the frittata finish cooking while the mozzarella melts; this will take about another 5-7 minutes.

  8. Once ready, serve your pizzaiola frittata hot or at room temperature, garnished with a few fresh basil leaves.
