Plum Ciambellone

Ingredients
- 250 g flour
- 150 g sugar
- 100 ml seed oil
- 100 ml milk
- 3 eggs
- 1 packet baking powder
- 1 pinch salt
- Grated zest of 1 lemon
- 200 g plums (fresh or dried; if using dried, soak them in water for a few hours)
Preparation
- Prepare the plums. If using fresh ones, wash them, remove the pit and cut into pieces that are not too large. If using dried plums, after soaking and draining, cut into small pieces.
- In a bowl, beat the eggs with the sugar until you obtain a foamy and pale mixture.
- Add the sifted flour, baking powder and pinch of salt, alternating with the milk and oil, continuing to stir to keep the mixture homogeneous.
- Incorporate the grated lemon zest and mix well.
- Finally add the plums and stir gently with an upward motion to distribute them evenly.
- Pour the batter into a bundt pan previously buttered and floured.
- Bake in a preheated oven at 180 degrees for about 40 minutes or until a toothpick inserted into the cake comes out clean.
- Remove the ciambellone from the oven and let it cool before unmolding.
Be sure to do the toothpick test to check for doneness: if the toothpick comes out moist and with batter attached, the cake needs a few more minutes of baking.
