Pomegranate Chicken Strips

Ingredients
- 500 g chicken breast
- 1 large pomegranate
- 1 onion
- 2 tablespoons extra-virgin olive oil
- Salt and pepper to taste
- 1 sprig of fresh rosemary (optional)
- Balsamic vinegar (optional)
Preparation
- Cut the chicken breast into strips and set them aside.
- Open the pomegranate and deseed it, taking care to reserve some of its juice as well.
- Finely slice the onion and sauté it in a pan with the olive oil until it becomes translucent.
- Add the chicken strips to the pan and cook until golden on all sides. Season with salt and pepper to taste.
- Add the pomegranate seeds to the chicken and, if you like, a sprig of rosemary to flavor.
- Let it cook for a few minutes so the flavors meld, then, if desired, add a splash of balsamic vinegar to intensify the sweet-and-sour taste.
- Once the chicken is fully cooked and the flavors are well combined, remove the rosemary and serve the dish hot.
