Pork Loin Involtini

Ingredients
- 500 g pork loin sliced thinly
- 150 g prosciutto crudo
- 100 g smoked scamorza cheese
- Fresh sage
- Fresh rosemary
- Extra virgin olive oil
- Salt and pepper to taste.
Preparation
- Start by flattening the pork loin slices with a meat mallet to make them thinner and easier to handle.
- Season the meat slices with salt and pepper on both sides.
- Cut the smoked scamorza into thin slices.
- On each slice of meat, place a thin slice of prosciutto crudo, one of scamorza, and a sage leaf.
- Roll up the meat, prosciutto, scamorza, and sage together and secure the rolls with a toothpick or kitchen twine.
- In a large skillet, heat the extra virgin olive oil and add a sprig of rosemary.
- Brown the rolls on all sides until golden.
- At this point, you can choose to continue cooking in the pan, adding a little water and cooking covered over low heat for about 20 minutes, or bake them in a preheated oven at 180 °C for the same time.
- Make sure the rolls are cooked just right; the meat should be tender and juicy.
Serve the rolls hot, perhaps accompanied by a side of grilled vegetables or a fresh salad.
