Pork Loin Rolls

Ingredients

  • 6 thin slices of pork loin
  • 6 slices of prosciutto
  • 6 sage leaves
  • 50 g grated Parmesan
  • Extra virgin olive oil
  • Salt and pepper to taste
  • White wine for deglazing
  • Toothpicks to secure the rolls

Preparation

  1. Lay out the pork loin slices and flatten them further with a meat mallet if necessary to obtain thin slices.
  2. Place a slice of prosciutto on each pork loin slice. Alternatively, if you prefer a less intense flavor, you can use cooked ham.
  3. Place a sage leaf and some grated Parmesan in the center of each slice, which will give a delicious savory note to your rolls.
  4. Roll the rolls tightly and securely, then secure them with toothpicks to prevent them from opening during cooking.
  5. Season the rolls with salt and pepper to your taste.
  6. Heat a drizzle of extra virgin olive oil in a non-stick pan and place the rolls in it.
  7. Sear the rolls on all sides until they have a uniform golden color.
  8. Deglaze with white wine and let the alcohol evaporate.
  9. Cover with a lid and continue cooking over medium-low heat for about 20 minutes, turning the rolls occasionally and adding a little water if necessary.
  10. Ensure the meat is cooked and the sauce is reduced and concentrated.
