Ingredients
- 2 medium potatoes
- 1 large onion
- 2 eggs
- 4 tablespoons of flour
- Salt to taste
- Black pepper to taste
- Oil for frying (seed oil or olive oil, depending on preferences)
Preparation
- Start by peeling the potatoes and grating them with a large-mesh grater. Place the grated potatoes in a colander and squeeze them well to remove excess water.
- Peel the onion and slice it thinly or grate it as you did for the potatoes.
- In a large bowl, mix the grated potatoes and onions. Add the eggs, flour, salt, and black pepper. Mix well until you obtain a homogeneous batter.
- Heat plenty of oil in a high-sided pan. When the oil is hot, take a spoonful of the batter and pour it into the oil, flattening it a bit to give the fritter a flat shape.
- Fry the fritters until they are golden on both sides, then drain them on paper towels to remove excess oil.
- Serve hot.
