Potato-Crusted Salmon

Ingredients
- 4 salmon fillets (about 150-200 g each)
- 800 g floury potatoes
- 2-3 tablespoons extra virgin olive oil
- Salt and pepper to taste
- Fresh rosemary (optional)
- 1 garlic clove
- Lemon juice
Preparation
- Preheat the oven to 200 °C.
- Peel the potatoes and slice them very thinly, preferably with a mandoline. The idea is to create slices similar to those used for making chips.
- Take a baking tray and line it with parchment paper. Arrange the potato slices, slightly overlapping them to form a “carpet” on which you will then place the salmon fillet.
- Season the salmon fillets with salt, pepper, and a little lemon juice.
- Place the salmon on the potato “carpet” and then cover the fish with more potato slices, as if you were “wrapping” it. Press lightly with your hands to make the potatoes adhere to the fish.
- Brush the surface of the potatoes with a little extra virgin olive oil and, if desired, add a little salt and chopped rosemary to flavor.
- Bake for about 20-25 minutes or until the potatoes are golden and crispy.
- Halfway through cooking, you can add a garlic clove to the tray to further flavor the dish.
Remove the potato-crusted salmon from the oven and let it rest for a few minutes before serving.
