Potato Flan
17/11/2023The potato flan is a delicious and comforting dish. Here is the recipe to prepare a classic potato flan.
Ingredients
- 800 g potatoes
- 100 g grated parmesan
- 2 eggs
- 100 ml milk
- Nutmeg to taste
- Butter as needed to grease the baking dish
- Salt and pepper to taste
- Breadcrumbs (optional)
- Extra virgin olive oil (for seasoning)
Preparation
- Preheat the oven to 180 °C.
- Boil the potatoes in salted water until they become soft. Drain them and let them cool slightly before peeling them.
- Mash the potatoes with a potato masher or with a fork until you obtain a homogeneous mixture.
- Add the grated Parmesan to the mashed potatoes, the eggs, the milk, a grating of nutmeg, salt and pepper to taste. Mix all the ingredients well until you obtain a smooth and homogeneous mixture.
- Grease a baking dish with butter and if you like, sprinkle it with breadcrumbs to obtain a crispy crust.
- Pour the potato mixture into the baking dish and level the surface with the back of a spoon.
- You can decorate the surface with pats of butter and an additional sprinkle of Parmesan if desired.
- Bake the potato flan for about 30-40 minutes or until the surface is golden and crispy.
- Once cooked, let it cool slightly for a few minutes before serving.
This flan can be enriched with the addition of diced cooked ham, chopped spinach or any other ingredient according to your tastes. It is a versatile dish that lends itself to many variations.

The potato flan was born as a recovery recipe to use leftover boiled potatoes. With the addition of a few simple ingredients it transforms into a rich and tasty dish. In some Italian regional variants, smoked scamorza or other cheeses are added to make the flan even more delicious.
