Potato Flan with Artichoke Salad

The potato flan with artichoke salad is a dish that combines the softness and sweetness of potatoes with the fresh and slightly bitter taste of artichokes. Here is the recipe.

Ingredients

  • 500 g of potatoes
  • 2 eggs
  • 50 g of grated Parmesan
  • Nutmeg to taste
  • Salt and pepper to taste
  • 30 g of butter
  • Breadcrumbs to taste

For the artichoke salad:

  • 4 artichokes
  • 1 lemon
  • Extra virgin olive oil to taste
  • Salt and pepper to taste
  • Chopped parsley to taste
  • (Optional) Parmesan shavings or other cheese to taste

Preparation

  1. Start by boiling the potatoes in salted water until they are soft. Once cooked, drain them and mash them with a potato masher.

  2. Add the eggs, grated Parmesan, a grating of nutmeg, salt and pepper to the puree, then mix until you obtain a homogeneous mixture.

  3. Prepare single-portion molds (or a baking dish if you prefer to make a single large flan), greasing them with a little butter and sprinkling them with breadcrumbs.

  4. Fill the molds with the potato mixture, leveling the surface. Bake in a preheated oven at 180 °C for about 20-25 minutes, or until the flans are golden on the surface.

  5. Meanwhile, clean the artichokes by removing the tougher outer leaves, cutting off the tips, and removing the inner “choke”. Slice them into thin wedges and immerse them in a bowl with water and lemon juice to prevent them from browning.

  6. Drain the artichokes and dress them with oil, salt, pepper, and chopped parsley. If desired, add Parmesan shavings or another cheese to taste.

  7. Serve the potato flans hot accompanied by the fresh artichoke salad.

The dish can be enriched by adding cooked ham or diced pancetta to the potato mixture, to give a more rustic and flavorful touch to the flan.
