Potato Gnocchi with Gorgonzola and Walnuts

Preparation

  1. Start by cooking the potatoes. Wash the potatoes and boil them whole with their skins in salted boiling water until tender. Then drain them, peel while still hot, and pass through a potato ricer.
  2. Allow the riced potatoes to cool slightly, then add a pinch of salt, the egg, and start incorporating the flour little by little, kneading until you obtain a homogeneous dough that is not too sticky. You may not need all the flour, so add it gradually.
  3. Cut the dough into pieces and form long ropes about 1.5 cm thick on the floured work surface. Cut into pieces about 2 cm long and, if desired, roll each gnocco on a fork or gnocchi board to create the characteristic ridged shape.
  4. Cook the gnocchi in salted boiling water. When they rise to the surface, they are ready; remove with a slotted spoon and let drain.
  5. For the sauce, melt the gorgonzola pieces with the cream in a pan over low heat until you obtain a smooth sauce. Adjust with pepper.
  6. Add the cooked gnocchi directly to the pan with the gorgonzola sauce and gently toss to coat them with the sauce.
  7. Plate the gnocchi and sprinkle with the chopped walnuts and, if desired, a bit of grated Parmesan.
