Potato Nests with Eggs
17/11/2023Potato nests with eggs are a fun dish to prepare and very tasty. Here’s how they’re made.
Ingredients
- 4 medium-sized potatoes
- 4 eggs
- Salt and pepper to taste
- Oil for frying
- Optional spices such as paprika or chives to add flavor
Preparation
- Peel the potatoes and grate them with a grater with large holes to obtain strips similar to julienne. Soak them in cold water for a few minutes to remove excess starch, then dry them well with a clean cloth or paper towels.
- Heat the oil in a large pan or in a fryer. The oil should be at a temperature of about 180 °C.
- Take a small amount of grated potatoes and shape them into a nest; you can use a ladle as a guide to create the round shape, making sure to leave a space in the center.
- Fry the potato nests in the hot oil until they become golden and crispy. Drain them on paper towels to remove excess oil and lightly salt them.
- Once the nests are ready, crack an egg into each of them. It is possible to do this step directly in the pan used to fry the nests with the oil just drained away, or in a separate pan if you want the eggs to integrate more with the nest.
- Cook the eggs in the nests until the white has set well, but the yolk remains soft. Season with salt and pepper.
- Serve the potato nests with eggs hot and, if desired, with a sprinkle of paprika or chopped chives.
Fun Facts
This dish is perfect for breakfast or brunch and can be customized with the addition of grated cheese, crispy bacon or finely chopped vegetables inside the nests before adding the egg.
