Potato Meatballs
17/11/2023Potato meatballs are a delicious and easy-to-prepare dish. Here is a version with an Italian touch for you:
Ingredients
- 500 g of potatoes
- 1 egg (large)
- 60 g of grated Parmesan
- 2 tablespoons of chopped fresh parsley
- Salt and pepper to taste
- Breadcrumbs (about 100 g for the mixture and extra for breading)
- Oil for frying
Preparation
- Start by boiling the potatoes until they are soft, then peel them and mash them with a potato masher or a fork until you obtain a smooth puree.
- Let the mashed potatoes cool a bit and then add the egg, Parmesan, chopped parsley, salt and pepper. Mix well until you get a homogeneous mixture.
- Add enough breadcrumbs to make the dough moldable. If it is too sticky, add more breadcrumbs little by little.
- Form balls with the mixture, roll them in the extra breadcrumbs to bread them well.
- Heat the oil in a pan and, when hot, fry the meatballs until they are golden and crispy on all sides.
- Drain them on paper towels to remove excess oil.
- Serve hot, preferably with a sauce of your choice to accompany.

Potato meatballs can be enriched with ingredients like cubed mozzarella or cooked ham to create a stringy or flavorful center. Moreover, they are perfect to be served as an appetizer or main course, especially if accompanied by a nice fresh salad or a side of grilled vegetables.
