Potato Meatballs

Potato meatballs are a delicious and easy-to-prepare dish. Here is a version with an Italian touch for you:

Ingredients

  • 500 g of potatoes
  • 1 egg (large)
  • 60 g of grated Parmesan
  • 2 tablespoons of chopped fresh parsley
  • Salt and pepper to taste
  • Breadcrumbs (about 100 g for the mixture and extra for breading)
  • Oil for frying

Preparation

  1. Start by boiling the potatoes until they are soft, then peel them and mash them with a potato masher or a fork until you obtain a smooth puree.
  2. Let the mashed potatoes cool a bit and then add the egg, Parmesan, chopped parsley, salt and pepper. Mix well until you get a homogeneous mixture.
  3. Add enough breadcrumbs to make the dough moldable. If it is too sticky, add more breadcrumbs little by little.
  4. Form balls with the mixture, roll them in the extra breadcrumbs to bread them well.
  5. Heat the oil in a pan and, when hot, fry the meatballs until they are golden and crispy on all sides.
  6. Drain them on paper towels to remove excess oil.
  7. Serve hot, preferably with a sauce of your choice to accompany.

Potato meatballs can be enriched with ingredients like cubed mozzarella or cooked ham to create a stringy or flavorful center. Moreover, they are perfect to be served as an appetizer or main course, especially if accompanied by a nice fresh salad or a side of grilled vegetables.
