Poured Cake with Jam

This recipe is based on the idea of creating a soft and fragrant cake, with the sweet and slightly tangy heart of the jam that mixes with the soft batter during baking. Here’s how to prepare it.
Ingredients
- 300 g of 00 flour
- 200 g of sugar
- 3 eggs
- 125 g of melted butter
- 1 packet of baking powder
- 1 pinch of salt
- Grated zest of 1 lemon (optional)
- Jam to taste (about 300 g)
Preparation
- Preheat the oven to 180 °C.
- Beat the eggs and sugar in a large bowl until you obtain a light and frothy mixture.
- Add the melted butter gradually, continuing to mix.
- Incorporate the sifted flour with the baking powder and the pinch of salt, and if desired, the grated lemon zest.
- Butter and flour a cake pan, then pour half of the batter into the pan.
- Spread a uniform layer of jam on the surface of the poured batter.
- Cover with the remaining batter, trying not to mix it with the jam.
- Bake and cook for about 35-40 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Let the cake cool before unmolding and serving it.
