17/11/2023Here is a simple and quick recipe to prepare delicious puff pastry pesto grissini, perfect as an appetizer or to accompany an antipasto.
Ingredients
- 1 roll of rectangular puff pastry
- Basil pesto to taste (as needed)
- 1 egg yolk (optional, for brushing)
- grated Parmesan (optional)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Gently unroll the puff pastry onto a work surface.
- Spread an even layer of basil pesto over the surface of the puff pastry. If you love the flavor of Parmesan, you can also sprinkle some grated Parmesan on top.
- Using a sharp knife or a pastry wheel, cut the puff pastry into strips about 1 cm wide.
- Take each strip from both ends and twist it onto itself to form a spiral. Be careful not to twist too tightly to avoid breaking.
- As you shape the grissini, place them on a baking tray lined with parchment paper, leaving a little space between each one.
- If desired, you can brush the grissini with a beaten egg yolk, which will make them golden and shiny after baking.
- Bake the grissini for about 10-15 minutes or until golden and crispy.
- Once baked, let them cool on a wire rack before serving.
The puff pastry pesto grissini are delicious on their own but can also be paired with cheeses and cured meats for a richer appetizer.
Trivia
Grissini, originating from Piedmont, were presumably invented in the 17th century. According to tradition, they were created for Duke Vittorio Amedeo II of Savoy, who had digestive issues. Today they are known and appreciated worldwide and are prepared in various versions, such as these enriched with the unique flavor of pesto.
