Ingredients
- 1 roll of ready-made puff pastry
- 400 g red radicchio
- 250 g sausage
- 1 small onion
- 100 g grated cheese (Parmesan or Pecorino)
- Extra virgin olive oil
- Salt and pepper
- 1 egg yolk (for brushing)
Preparation
- Preheat the oven to 180 °C.
- Clean the radicchio, removing the tougher outer leaves, and cut it into thin strips.
- In a pan, sauté the finely chopped onion with a drizzle of extra virgin olive oil.
- Add the crumbled sausage, without the skin, and brown it until fully cooked.
- Add the radicchio to the sausage, seasoning with salt and pepper to taste. Cook until the radicchio has wilted and the liquids have evaporated. Let cool slightly.
- Roll out the puff pastry sheet and spread the radicchio and sausage mixture in the center, leaving a border of about 2 cm free.
- Sprinkle the grated cheese over the radicchio and sausage mixture.
- Fold the edges of the puff pastry inward to create a frame.
- Beat the egg yolk and brush the edges of the puff pastry for even browning during baking.
- Bake in the oven for about 20-25 minutes or until the puff pastry is golden and crispy.
- Let cool for a few minutes before serving.
