Pumpkin Cake

Ingredients

  • 500 g cleaned pumpkin
  • 300 g 00 flour
  • 200 g sugar
  • 100 g softened butter
  • 3 eggs
  • 100 ml milk
  • 1 packet baking powder
  • 1 teaspoon ground cinnamon
  • 1 pinch nutmeg
  • 1 pinch salt
  • Powdered sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C.

  2. Cut the pumpkin into pieces and steam or bake it until it becomes very soft. Then, mash it into a puree with a fork or a blender.

  3. In a bowl, beat the eggs with the sugar until you obtain a light and frothy mixture.

  4. Add the softened butter and continue mixing.

  5. Incorporate the pumpkin puree into the egg and sugar mixture and mix well.

  6. Add the milk and mix again until you have a homogeneous mixture.

  7. In a separate bowl, sift the flour with the baking powder, cinnamon, nutmeg and salt.

  8. Add the dry ingredients to the pumpkin mixture a little at a time, stirring to avoid lumps.

  9. Pour the batter into a buttered and floured cake pan.

  10. Bake and cook for about 40-45 minutes or until a toothpick inserted into the center of the cake comes out clean.

  11. Remove the cake from the oven and let it cool. If desired, before serving, you can dust with powdered sugar.
