Quinoa with Vegetables

Ingredients
- 200 g quinoa
- 400 ml vegetable broth or water
- 1 zucchini
- 1 red bell pepper
- 1 small onion
- 2 garlic cloves
- 200 g cherry tomatoes
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh basil
- Grated Parmesan (optional)
Preparation
- Start by rinsing the quinoa under running water using a sieve until the water runs clear.
- Bring the vegetable broth (or water) to a boil and cook the quinoa for about 15-20 minutes or until it absorbs all the liquid and the grains have opened. Then let it rest covered for 5 minutes.
- Meanwhile, dice the zucchini, red bell pepper, and small onion, and mince the garlic cloves.
- Heat a drizzle of extra virgin olive oil in a pan and sauté the onion and garlic until they become translucent.
- Add the zucchini and bell pepper, and cook the vegetables until tender, adding the cherry tomatoes cut in half towards the end of cooking.
- Season with salt and pepper to taste, and add the cooked quinoa to the vegetables, tossing everything together in the pan for a few minutes.
- Serve hot, garnished with chopped fresh basil and, if desired, a sprinkle of grated Parmesan.
