Quinoa with Vegetables

Ingredients

  • 200 g quinoa
  • 400 ml vegetable broth or water
  • 1 zucchini
  • 1 red bell pepper
  • 1 small onion
  • 2 garlic cloves
  • 200 g cherry tomatoes
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil
  • Grated Parmesan (optional)

Preparation

  1. Start by rinsing the quinoa under running water using a sieve until the water runs clear.
  2. Bring the vegetable broth (or water) to a boil and cook the quinoa for about 15-20 minutes or until it absorbs all the liquid and the grains have opened. Then let it rest covered for 5 minutes.
  3. Meanwhile, dice the zucchini, red bell pepper, and small onion, and mince the garlic cloves.
  4. Heat a drizzle of extra virgin olive oil in a pan and sauté the onion and garlic until they become translucent.
  5. Add the zucchini and bell pepper, and cook the vegetables until tender, adding the cherry tomatoes cut in half towards the end of cooking.
  6. Season with salt and pepper to taste, and add the cooked quinoa to the vegetables, tossing everything together in the pan for a few minutes.
  7. Serve hot, garnished with chopped fresh basil and, if desired, a sprinkle of grated Parmesan.
