Red Cabbage Salad

Red cabbage salad is a fresh and crunchy dish, perfect as a side or summer dish. Here are the ingredients and preparation.

Ingredients

  • 1 medium-sized red cabbage
  • 2 carrots
  • 1 apple (if you prefer a touch of sweetness)
  • Lemon juice
  • Extra virgin olive oil
  • Salt
  • Black pepper (optional)
  • Sesame seeds or sunflower seeds (for a crunchy touch)
  • Balsamic or apple cider vinegar (to taste)

Preparation

  1. Wash the red cabbage and remove the tougher outer leaves. Cut the cabbage in half and remove the core. Slice the cabbage as thinly as possible to obtain thin strips.
  2. Peel the carrots and grate them, or if you prefer a crunchier effect, cut them into julienne.
  3. Peel the apple, remove the core and cut it into thin slices or cubes, depending on your preference. To prevent oxidation, you may want to squeeze some lemon juice on the apple slices.
  4. In a large bowl, combine the red cabbage, carrots and apple. Mix gently.
  5. Season with lemon juice, a pinch of salt, and black pepper to taste. Add the extra virgin olive oil and, if you like, a touch of vinegar.
  6. Mix the salad well to ensure the dressing is well distributed.
  7. If desired, add sesame or sunflower seeds for extra crunch.
  8. Let the salad rest in the fridge for at least 30 minutes before serving, so that the flavors can blend well.
