Red Prawns with Grapes
17/11/2023Red prawns with grapes are an elegant dish that combines the sweet flavor of grapes with the bolder taste of the prawns. Here is the Italian recipe to prepare this dish:
Ingredients
- 12 medium-sized red prawns
- 200 g white grapes (preferably seedless)
- 1 glass dry white wine
- 2 garlic cloves
- Fresh chopped parsley to taste
- Extra virgin olive oil
- Salt and pepper to taste
Preparation
-
Start by cleaning the prawns: remove the head, tail, shell, and intestine using a toothpick. Set aside.
-
Wash the grapes and detach the berries from the bunch. If the grapes are not seedless, halve the berries and remove the seeds.
-
In a large pan, heat a drizzle of oil with the garlic cloves (crushed with the blade of a knife or sliced) until the garlic is golden.
-
Add the prawns to the pan and sear them for about 2 minutes per side over high heat. Season with salt and pepper to your taste.
-
Deglaze the prawns with the glass of white wine and let the alcohol evaporate for a few minutes.
-
Add the grape berries to the pan and cook for another 4-5 minutes, until the grapes become slightly soft but still whole.
-
Sprinkle with fresh chopped parsley before turning off the heat and gently stir to distribute the aroma.
-
Plate the prawns with the grapes and a drizzle of raw oil, if desired.
Curiosities
Red prawns are prized for their tender and flavorful meat. This type of crustacean is particularly common in warm seas and is highly sought after for preparing refined dishes. Pairing prawns with the natural sweetness of grapes creates a very pleasant taste contrast that can be further enhanced by adding a good white wine to the dish. For an even more Italian touch, you could choose a quality Chardonnay or Pinot Grigio for the deglazing.
