Rice Salad with Aromatic Herbs and Soft-Boiled Egg

Ingredients

  • 200 g rice (preferably a variety that holds its texture when cooked, such as Arborio or Carnaroli)
  • 4 fresh eggs
  • A selection of fresh aromatic herbs to taste (for example basil, parsley, mint, chives)
  • Salt to taste
  • Black pepper to taste
  • Extra virgin olive oil
  • Lemon juice or white balsamic vinegar
  • Optional: mixed vegetables such as peas, green beans, cherry tomatoes, to add color and crunch

Preparation

  1. Cook the rice in plenty of salted water following the package instructions to keep it al dente. Once cooked, drain and quickly cool under cold running water. Shake well to remove excess water and let cool completely.
  2. Meanwhile, bring a pot of water to a boil. Reduce the heat to a gentle simmer, and with a spoon gently lower in the eggs. Cook for about 6-7 minutes for a soft-boiled egg that is not too runny. Immediately cool them in cold water to stop the cooking, and when cold, carefully peel them.
  3. Wash and roughly chop the aromatic herbs. If you have chosen to include mixed vegetables, briefly cook them in boiling water and then cool with ice water.
  4. In a large bowl, combine the rice with the aromatic herbs (and vegetables if using), dress with oil, salt, pepper and a squeeze of lemon juice or white balsamic vinegar. Gently mix to avoid breaking the rice grains.
  5. Plate the rice salad and place a soft-boiled egg cut in half on each portion, allowing the yolk to slightly ooze.
  6. Add an extra pinch of fresh pepper and a drizzle of raw oil over the yolks before serving.
