Ricotta and Mortadella Medallions

Ingredients
- 250 g ricotta
- 100 g mortadella in a single thick slice
- 1 egg
- Breadcrumbs to taste
- Grated cheese (parmesan or pecorino) to taste
- Salt to taste
- Pepper to taste
- Nutmeg to taste
- Seed oil for frying
- Sesame or poppy seeds (optional)
Preparation
- In a bowl, mix the ricotta with an egg until you obtain a homogeneous mixture.
- Add a pinch of salt, pepper and a grating of nutmeg to season.
- Cut the mortadella into small cubes and incorporate them into the ricotta mixture.
- Add grated cheese to taste and mix everything well.
- Shape small medallions with the mixture using wet hands to prevent sticking.
- Coat each medallion in breadcrumbs, making sure it is completely covered.
- For a special touch, you can add sesame or poppy seeds to the breaded medallions.
- In a pan, heat plenty of seed oil and when it reaches the right temperature, fry the medallions until golden and crispy.
- Drain them on absorbent paper to remove excess oil.
- Serve the medallions hot as an appetizer or main course, accompanied by a fresh salad or a side of seasonal vegetables.
