Ricotta Flans

Here is the recipe for ricotta flans, simple and delicious, perfect for an appetizer or a light main course.

Ingredients

  • 250 g fresh ricotta
  • 2 eggs
  • 50 g grated Parmesan
  • Salt to taste
  • Pepper to taste
  • Nutmeg to taste
  • Butter and breadcrumbs for the molds
  • Aromatic herbs to taste (e.g., thyme, marjoram, basil) finely chopped (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Butter and sprinkle with breadcrumbs the molds you intend to use for the flans.
  3. In a bowl, mix the ricotta with the eggs until you have a homogeneous mixture.
  4. Add the Parmesan, a pinch of salt, pepper, and grated nutmeg to taste. If desired, you can also add some finely chopped aromatic herbs to give an extra touch of flavor.
  5. Pour the mixture into the prepared molds, not filling them to the brim to allow the flans to rise during baking.
  6. Bake in the oven for about 20-25 minutes, or until the flans are golden and puffed.
  7. Let cool slightly before unmolding the flans from their molds.

You can serve the ricotta flans accompanied by a light tomato sauce or a fresh salad.
