Ricotta Fritters

Ricotta fritters are a simple and delicious dessert, perfect for a spoon dessert or for a greedy snack. Here’s the recipe:

Ingredients

  • 250 grams of ricotta
  • 2 eggs
  • 50 grams of sugar
  • 1 packet of vanillin or a teaspoon of vanilla extract
  • Grated zest of 1 lemon (if you like the aroma)
  • 150 grams of 00 flour
  • 1 teaspoon of baking powder for sweets
  • A pinch of salt
  • Oil for frying (seed oil is fine)
  • Powdered sugar for garnish

Preparation

  1. In a bowl, mix the ricotta with the eggs until you obtain a homogeneous mixture.
  2. Add the sugar, the vanillin or vanilla extract and the grated lemon zest, if you are using it.
  3. Mix well.
  4. Incorporate the flour, the baking powder and the pinch of salt, combining all the ingredients until a smooth dough without lumps forms.
  5. Let the dough rest for about 10-15 minutes.
  6. Meanwhile, heat plenty of oil in a pan suitable for frying and bring it to a temperature of about 170-180 °C. You can check the temperature by putting a piece of bread in the oil; if it fries and comes to the surface in a couple of seconds without burning, the oil is ready.
  7. Use two teaspoons to take portions of the dough and let them fall gently into the hot oil.
  8. Fry the fritters until they become golden on all sides. This will take about 2-3 minutes per side.
  9. Drain them with a slotted spoon and let them rest on absorbent paper to remove excess oil.
  10. Roll the fritters in powdered sugar before serving them.

If you prefer an even more marked Italian touch, you can add chocolate chips to the dough or replace part of the sugar with honey.
