Rigatoni with Salmon and Prosecco

Ingredients

  • 320 g of rigatoni
  • 200 g of smoked salmon
  • 1 small onion
  • 200 ml of prosecco
  • 200 ml of cooking cream
  • Extra virgin olive oil to taste
  • Salt to taste
  • Black pepper to taste
  • Fresh dill (optional)
  • Grated lemon zest (optional)

Preparation

  1. Bring a pot of salted water to a boil and cook the rigatoni al dente, according to the instructions on the package.

  2. Meanwhile, finely slice the onion and cut the smoked salmon into strips or cubes.

  3. In a large skillet, heat a drizzle of extra virgin olive oil and sauté the onion until it becomes translucent.

  4. Add the smoked salmon to the skillet and let it flavor for a few minutes, being careful not to let it dry out too much.

  5. Deglaze with the prosecco and let the alcohol evaporate over medium-high heat.

  6. Reduce the heat and pour in the cooking cream, stirring gently to combine everything. If you want a more aromatic flavor, you can add the grated lemon zest at this stage.

  7. Season with salt and pepper to taste, remembering that the salmon already has a savory flavor on its own, so it’s best to taste before adding more salt.

  8. Drain the rigatoni al dente and transfer them to the skillet with the salmon and prosecco sauce, tossing everything for a few minutes so the pasta absorbs the flavors.

  9. If desired, when serving, garnish with a little chopped fresh dill to add a touch of color and aroma.
