Rustic Lasagne with Treviso Radicchio

Ingredients

  • 250 g fresh lasagne sheets (egg pasta)
  • 300 g Treviso radicchio
  • 250 g fresh ricotta
  • 200 g taleggio cheese
  • 100 g grated Parmesan
  • 1 small onion
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste
  • Nutmeg to taste
  • Butter for the baking dish

Béchamel:

  • 500 ml milk
  • 50 g flour
  • 50 g butter
  • Salt to taste
  • Nutmeg to taste

Preparation

  1. Start by preparing the béchamel: melt the butter in a saucepan, then add the flour and stir well to avoid lumps. Pour in the hot milk gradually, continuing to stir, and cook over medium heat until the béchamel is thick and smooth. Season with salt and nutmeg to taste.

  2. Clean the radicchio, cut it into thin strips, and wilt it in a pan with a drizzle of oil and the finely chopped onion. Cook for about 10 minutes over medium heat, adding salt and pepper to taste. Add a splash of water if necessary to prevent sticking.

  3. Mix the ricotta with the grated Parmesan in a bowl and season with a pinch of salt, pepper and nutmeg.

  4. Butter a baking dish and begin assembling the lasagne by alternating layers of pasta sheets, béchamel, the ricotta and Parmesan mixture, the stewed radicchio, and cubes of taleggio until all ingredients are used up. Make sure to finish with a layer of béchamel and sprinkle the top with Parmesan.

  5. Bake in a preheated oven at 180° C for about 25-30 minutes, until the surface is golden and crisp.

  6. Let the lasagne rest for a few minutes before serving to allow the layers to settle.
