Sage and Almond Involtini

Ingredients

  • 12 large fresh sage leaves
  • 12 thin slices of chicken or turkey breast
  • 50 g flaked almonds
  • 100 g thinly sliced cured ham
  • Flour, as needed
  • Extra virgin olive oil
  • Salt and pepper, as needed
  • White wine for deglazing

Preparation

  1. Start by lightly pounding the chicken or turkey breast slices between two sheets of plastic wrap until they are flat and thin.
  2. Season the meat slices with salt and pepper on both sides.
  3. Place a sage leaf on each slice and sprinkle with a few almond flakes.
  4. Add a slice of cured ham on top of each meat slice.
  5. Roll up the involtini and secure them with a toothpick.
  6. Dredge the rolls in flour to coat them lightly.
  7. Heat a little extra virgin olive oil in a pan and add the rolls.
  8. Brown the rolls on all sides until golden.
  9. Deglaze with a splash of white wine and let the alcohol evaporate.
  10. Cook the rolls for another 5-10 minutes, until the meat is cooked through.
