Ingredients
- 2 ripe but still firm peaches
- 1 burrata of about 200 g
- Mixed salad greens to taste (for example arugula, lettuce, baby spinach)
- Extra virgin olive oil
- Balsamic vinegar or balsamic reduction
- Salt and pepper to taste
- Fresh mint (optional)
- Toasted walnuts or pine nuts to add crunch (optional)
Preparation
- Preheat a grill or grill pan over medium-high heat.
- Wash the peaches, cut them in half and remove the pit. Cut each half into slices that are not too thin.
- Lightly brush the peaches with a drizzle of oil and place them on the hot grill. Let them grill for about 2-3 minutes per side, until they have nice caramelized grill marks. Turn them gently to avoid breaking.
