Salmon and Zucchini Lasagna
17/11/2023Salmon and zucchini lasagna is a tasty dish that combines the delicate flavor of fish with the sweeter taste of zucchini. It is an excellent variant of the classic Italian dish. Here is the recipe to prepare delicious salmon and zucchini lasagna.
Ingredients
- 250 g egg lasagna sheets (fresh or dry to pre-cook)
- 300 g smoked salmon
- 2 medium zucchini
- 250 g béchamel
- 200 g mozzarella
- 30 g butter
- Salt
- Pepper
- Dill or chives, to taste

If using dry lasagna sheets, start by soaking them in boiling salted water for the time indicated on the package, then drain and dry them on a clean cloth. If you choose fresh lasagna sheets, you can use them directly.

Wash the zucchini and cut them into rounds or sticks, then sauté them in a pan with a drizzle of olive oil, salt and pepper until lightly golden.

Cut the smoked salmon into strips and, if desired, quickly sauté it in a pan with a little butter, but this step is optional.

Prepare a not-too-thick béchamel. In a saucepan, melt the butter, add the flour stirring quickly to avoid lumps and add the hot milk, continuing to stir. Cook until the béchamel thickens, then season with salt, pepper and a dash of nutmeg.

Now start assembling the lasagna. Lightly grease the bottom of a baking dish and spread a layer of béchamel. Cover with lasagna sheets, add the salmon, zucchini and mozzarella cut into cubes or slices. Cover with another layer of béchamel.

Continue alternating layers of lasagna, salmon, zucchini, mozzarella and béchamel until the ingredients are used up, finishing with béchamel and a sprinkle of grated cheese if you want a golden crust on top.

Bake in a preheated oven at 180 °C for about 20-25 minutes, until the surface is golden and crispy.

Let the lasagna rest for a few minutes before serving; this will make cutting easier and allow the flavors to meld better.
For an even more Italian touch, you can flavor the béchamel with dill or chives, which pair well with salmon, and if desired, add Parmesan to the béchamel for extra flavor.
