Salmon and Zucchini Skewers

Ingredients
- 500 g fresh salmon fillet
- 2 medium zucchini
- 1 lemon (both the juice and the grated zest)
- 2 garlic cloves
- Extra virgin olive oil
- Salt and pepper to taste
- Fresh chives or, alternatively, fresh parsley
- Wooden or metal skewers

Start by soaking the wooden skewers in cold water for about 30 minutes. This step is essential if using wooden skewers, to prevent them from burning during cooking.

Cut the salmon fillet into 2-3 cm cubes.

Wash the zucchini and slice them into rounds about 0.5 cm thick.

Prepare a marinade by mixing the lemon juice, grated zest, extra virgin olive oil, finely chopped garlic, salt, and pepper in a bowl.

Place the salmon and zucchini in the marinade and let them rest for 15-20 minutes in the refrigerator.

Assemble the skewers by alternating a piece of salmon and a zucchini round until all ingredients are used.
