Salmon Trout Stuffed Ravioli

Ingredients

  • 300 g of 00 flour
  • 3 eggs
  • 200 g of fresh salmon trout
  • 1 shallot
  • Butter to taste
  • Fresh sage
  • Salt and pepper to taste
  • Extra virgin olive oil
  • 50 g of fresh ricotta
  • Nutmeg to taste
  • Vegetable or fish broth

Preparation

  1. Start by preparing the egg pasta: arrange the flour in a mound on a clean surface, break the eggs in the center and begin kneading until you obtain a smooth and elastic dough. Cover with plastic wrap and let rest for about 30 minutes.

  2. Meanwhile, cook the salmon trout. In a pan, sauté the finely chopped shallot with a drizzle of extra virgin olive oil. Then add the salmon trout and cook until it can be easily flaked with a fork. Once cooked, remove the skin and any bones, flake it and let cool.

  3. Combine the flaked trout with the ricotta, a fresh grating of nutmeg, salt and pepper to taste. Mix well to obtain a homogeneous filling.

  4. Roll out the egg pasta into thin sheets, then place small amounts of filling in the center of one sheet, spaced apart. Cover with another sheet of pasta and seal well around the filling, removing the air and being careful not to tear the pasta. Using a cookie cutter or pasta cutter wheel, cut out the ravioli.

  5. Bring a pot of lightly salted water to a boil and cook the ravioli for a few minutes, until they rise to the surface.

  6. While the ravioli are cooking, prepare a simple sauce by melting the butter in a pan with a few fresh sage leaves.

  7. Drain the ravioli gently and transfer them to the pan with the butter and sage, tossing briefly to coat them with flavor.

  8. Plate the ravioli, add a pinch of fresh pepper and, if desired, a sprinkle of grated cheese.
