17/11/2023Here is the recipe to prepare a delicious pasta dish with sausage and cherry tomatoes, with an Italian touch.
Ingredients
- 320 grams of pasta (penne, rigatoni or other short pasta works well)
- 400 grams of cherry tomatoes
- 300 grams of sausage (preferably fresh pork sausage)
- 1/2 glass of white wine (for deglazing)
- 1 clove of garlic
- Extra virgin olive oil (as needed)
- Salt (as needed)
- Pepper (as needed)
- Chili flakes (optional, if you like a spicy kick)
- A bunch of fresh basil for garnish
Preparation
-
Start by bringing a pot of salted water to a boil to cook the pasta. Follow the instructions on the pasta package for al dente cooking. When the pasta is cooked, drain it, reserving a bit of the cooking water.
-
Meanwhile, wash the cherry tomatoes and cut them in half or leave them whole if they are small.
-
Remove the casing from the sausage and crumble it with your hands or using a fork.
-
In a large skillet, heat a drizzle of oil and sauté the garlic until golden. You can choose to remove it or leave it for a more intense flavor.
-
Add the crumbled sausage to the skillet and let it brown well, breaking it up further with a wooden spoon.
-
When the sausage has taken on color, deglaze with the white wine and let the alcohol evaporate over high heat.
-
Add the cherry tomatoes, salt, pepper, and chili flakes to taste. Cook for about 10-15 minutes until the tomatoes start to break down, creating a light sauce.
-
Add the cooked pasta to the skillet with the sauce, adding a little cooking water if needed to make the sauce creamier and combine everything well.
-
Plate the pasta, garnish with a fresh basil leaf and, if desired, add a grating of pecorino or parmesan.
Serve immediately to enjoy it at its best.
