Sausage and Cherry Tomato Pasta

Here is the recipe to prepare a delicious pasta dish with sausage and cherry tomatoes, with an Italian touch.

Ingredients

  • 320 grams of pasta (penne, rigatoni or other short pasta works well)
  • 400 grams of cherry tomatoes
  • 300 grams of sausage (preferably fresh pork sausage)
  • 1/2 glass of white wine (for deglazing)
  • 1 clove of garlic
  • Extra virgin olive oil (as needed)
  • Salt (as needed)
  • Pepper (as needed)
  • Chili flakes (optional, if you like a spicy kick)
  • A bunch of fresh basil for garnish

Preparation

  1. Start by bringing a pot of salted water to a boil to cook the pasta. Follow the instructions on the pasta package for al dente cooking. When the pasta is cooked, drain it, reserving a bit of the cooking water.

  2. Meanwhile, wash the cherry tomatoes and cut them in half or leave them whole if they are small.

  3. Remove the casing from the sausage and crumble it with your hands or using a fork.

  4. In a large skillet, heat a drizzle of oil and sauté the garlic until golden. You can choose to remove it or leave it for a more intense flavor.

  5. Add the crumbled sausage to the skillet and let it brown well, breaking it up further with a wooden spoon.

  6. When the sausage has taken on color, deglaze with the white wine and let the alcohol evaporate over high heat.

  7. Add the cherry tomatoes, salt, pepper, and chili flakes to taste. Cook for about 10-15 minutes until the tomatoes start to break down, creating a light sauce.

  8. Add the cooked pasta to the skillet with the sauce, adding a little cooking water if needed to make the sauce creamier and combine everything well.

  9. Plate the pasta, garnish with a fresh basil leaf and, if desired, add a grating of pecorino or parmesan.

Serve immediately to enjoy it at its best.
