Savory Arugula Tart

Ingredients

  • 1 roll of puff pastry or shortcrust pastry
  • 200 g ricotta
  • 100 g arugula, washed and dried
  • 2 eggs
  • 50 g grated parmesan
  • Salt to taste
  • Pepper to taste
  • Extra virgin olive oil

Preparation

  1. Preheat the oven to 180° C.
  2. Roll out the puff pastry or shortcrust pastry into a round baking pan, previously greased with a little oil or lined with parchment paper. Prick the bottom with a fork to prevent it from puffing up too much during baking.
  3. In a bowl, combine the ricotta with the eggs, parmesan, salt, and pepper until you obtain a smooth mixture.
  4. Add the chopped arugula to the ricotta and egg mixture and stir gently to distribute the greens evenly.
  5. Pour the filling onto the pastry base in the pan and level with a spatula.
  6. Bake the savory tart for about 25-30 minutes or until the surface is golden and the pastry is cooked.
  7. Let the savory arugula tart cool slightly before serving.
